So here is my supper. (I decided to post a picture of this meal because, well, breakfast and lunch were not picture worthy in my book - a handful of mixed greens and a cup of chicken with olive oil is not that pretty at all.) Supper is free range chicken "stir fry" with mixed greens and coconut oil with a small serving of green beans (green beans are technically not a bean so they are ok on this protocol).
I've come to realize now, more than ever, that meal prep is the ONLY way to go for any type of meal plan - and not just the AIP. That will be my goal this weekend - to have all my meals prepped and ready to go. While Sunday is typically my designated meal prep day, and while I did have chicken in the crock pot, which I swear I need more than one crock pot since meats in a crock pot tend to turn out more juicier than in the oven and your kitchen doesn't go from a nice 75 degrees to about 100 all within an hour - it is not fun to cook when you feel like you are cooking yourself.
Now for those that have kids, you know how hard it is to meal prep or even cook for that matter.
So I am thinking of dividing meal prep between Saturday and Sunday. This, of course, will be a trial and error way of doing things and will probably just mean that I will have more dishes to wash than normal. I will also enlist the help of my husband (so yes, hunny, if you are reading this, you have been notified). Although this will depend on what his schedule is too when he isn't out in the garage (a.k.a. his man cave) working on his many snowmobiles, cranking them up for no reason (although I've been told that "I have to make sure they run"), which in turn freaks out our 2 year old whom I have to drop what I'm doing and "hide" on the couch with her.
My other alternative is to cook is bulk, which I somewhat do already, and to freeze any leftovers. I also am thinking that since my food list is somewhat limited until I find out which foods I react to, I will need to venture out and find recipes that I know contain foods that I can eat. Variety is the spice of life right?

Meal prep is my downfall! I get so distracted with the kiddos that it just never works out.
ReplyDeleteI am so giggling at the cartoon. I have no kids so mostly can just chop chop chop but don't let husbands fool you! They can be just big kids at times!

I do so much better when I meal prep! That reminds me, I need to go make my list for the store! haha
